Mac users: Screenium or screen flow.

Search on google for these.
Best for windows and mac are = Camstudio and screenium!

The newer versions have compatibility with Aero Desktop, so you can record your desktop when using Windows 7 or Vista (i don't know if it uses Aero, but whatever).
