I'd recommend choosing Sandy Bridge over Ivy bridge, it has heating problems and has proved to have a lower lifespan. The 2500K is a real good old child, but I'd say rather go for a 2600K or 2700K ( my current processor ), you get hyper-threading and slightly better performance ( and overclocking ) with i7 range.
     As for graphics, I duly advise the HD7950, it's an excellent card! If you want a serious graphics card but are on a budget, nVidia shifted it's weight and made it's 65x+ range much less affordable than the HD79xx range for performance to cash ratio.
     Motherboard, well, Gigabyte Z77X-UD5H all the way. It's a perfect board, I upgraded both my PC's to this motherboard recently and it was great, I got slightly better RAM clocking than my Sabertooth P67, and all the goodies that come with the Z7x chipset.
     RAM, I have 32GB of G.Skill 2133Mhz wityh CAS 9, and they are really good performance. But I doubt you need that much RAM. Go with a 8GB 1600Mhz ( can OC to 2133Mhz and set the CAS up a bit for better bandwidth ) kit from G.Skill, they are quite cheap now-a-days, pretty sure they were close to one hundred dollars. You might want to go up to 16GB later on, Minecraft runs like a beast ( even with Optifine's Extreme view distance ) when you give it more RAM.
     Any 750W PSU should be able to handle this rig, using the 80% rule.

The rest you can decide for yourself, I mean, you know how much storage you'll need, whether you want an SSD or not, what keyboard and mouse you want ( mouse-wise I'd suggest a RAT 7, it's excellent, I bought it despite my serious G9 love! Keyboard only barely matters, since all you use are WASD, shift, control, etc, right? )

Wish you the best buy, though this machine might cost you a bit.
